From centuries-old trees of Nostrale di Rigali, is the beginning of Puro. It’s a Monocultivar unique in the word – origins of a narrow band of the mountain Umbria apennines and its climatic characteristics gives this oil unmatched aromatic notes. Harvested by hand is its origin and takes its cultivar name were we have our olive groves.

How we produce it
Harvested strictly by hand in advance the degree of ripeness. Crushing in traditional mill only by mechanical procedures with cold pressing, without exceeding 20°C to obtain the highest quality. On the same day as pressing, the oil is filtered to ensure a longer shelf life. It is stored in tanks under nitrogen until bottling.
Tasting notes
Nose: vegetal notes of freshly cut grass and tomato leaf.
Taste: intensely fruity, barely pungent nuances gradually emerge, leaving behind a long and pleasant persistence.

Raw condiment, pasta dishes, legume soups, red meat and game, bruschetta, cooked herb
